This toast was the final meal I served at the Lasting Connections Retreat at Somewhere in Time Farm. It was a slow Sunday morning—the kind that feels both full and quiet. Bags were packed, people were lingering with coffee and conversation, and you could tell no one was quite ready to say goodbye.
I wanted this meal to be a soft landing. A moment to savor before stepping back into real life. And to be honest, this dish—avocado toast with all the fixings—is something I come back to over and over. It’s one of my favorites, not just because it tastes good, but because it brings people together. It’s colorful, comforting, and deeply nourishing.
When I make this, it’s never just about food. It’s about creating a memory people can take with them. Something that feels like home, even when they're far from it.

Base
22 slices sourdough bread (or another hearty loaf)
Olive oil or avocado oil (optional, for toasting)
Avocado Mixture
6–7 ripe avocados
Juice of 2 limes
1 large shallot, finely diced
1 cup cherry tomatoes, quartered
1/2 cup fresh cilantro, chopped
1/2 tsp garlic powder or 1 clove fresh garlic, minced
1/4 tsp onion powder (optional)
Salt and pepper, to taste
Red pepper flakes, to taste (optional)
Toppings
1/2 cup crumbled feta (optional)
1 bunch fresh chives, chopped
Quick-pickled radishes (see below)
Quick-Pickled Radishes (Make ahead)
1 bunch radishes, thinly sliced
1/2 cup red wine vinegar
1/2 cup water
2 tsp sugar
1 tsp salt
Instructions:
In a small saucepan, warm the vinegar, water, sugar, and salt until sugar dissolves.
Pour over sliced radishes in a jar.
Seal and refrigerate overnight.

Toast the Bread: Lightly brush sourdough slices with oil if desired. Toast in the oven at 375°F (190°C) for 8–10 minutes or in a skillet until golden and crisp.
Make the Avocado Mixture: In a large bowl, mash the avocados. Stir in lime juice, shallot, tomatoes, cilantro, garlic, and optional spices. Season with salt, pepper, and red pepper flakes to taste.
Assemble the Toasts: Spread avocado mixture over each slice of toast. Top with pickled radishes, a sprinkle of feta (if using), and a generous shower of chives.
Serve Immediately: Best enjoyed fresh, surrounded by people you love or moments that matter.
